Oolong

Oolong tea is a semi-fermented tea that's a cross between green and black tea in terms of oxidation and flavor: Production Oolong tea leaves are plucked from the Camellia sinensis plant, withered, rolled to break down cell walls, crushed, and fermented for a short time. The leaves are then dried over fire or in an oven. Appearance Oolong tea leaves can be rolled, twisted, or curled into balls or thin strands.
